Food Friday: GF Apple Cinnamon Muffins

Fall is finally here!!!  We even had to pull out some long-sleeve shirts and sweaters this week :o)  We decided to welcome Fall with some GF Apple Cinnamon Muffins.  I found an excellent recipe on Gluten Free Goddess and altered as needed (we did not have some of the ingredients in our pantry).  They sure were delicious though!

INGREDIENTS:

DRY
3/4 cup brown rice flour
1/2 cup sorghum flour
1/4 cup tapioca starch/flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon xanthan gum
1 1/2 teaspoons cinnamon

WET
1 cup natural applesauce
1/3 cup olive oil
1/2 cup honey
2 teaspoons vanilla
2 large eggs
4 tablespoons apple juice

STIR-IN
1 1/2 cups chopped apples

DIRECTIONS:
 
1.  Preheat the oven to 350 degrees F.
2.  Whisk together the dry ingredients:
3.  In a separate mixing bowl beat together wet ingredients until smooth
4.  Add wet ingredients to the dry ingredients and combine well. Add more apple juice a tablespoon at a time, as needed to make a smooth batter.
5.  Stir in apples.
6.  Spoon the batter into twelve muffin cups.
7.  Sprinkle with raw sugar, if desired, for a crunchy top.
8.  Bake in the center of a preheated oven until firm and golden- about 20 to 25 minutes or so. Test with a wooden pick if you need to. Remove the muffins from the pan and cool on a wire rack.
