Food Friday: Light 'n Lacy Oatmeal Crisps

I have been trying to bake with "M" at least a couple times each week.  We recently have been experimenting with different cookie recipes.  This week's recipe comes from Enjoy Life's Cookies for Everyone!  It is naturally gluten-free and delicious!  This delicate, lacy cookie is perfect for a tea party.

INGREDIENTS:
*3/4 cup firmly packed brown sugar
*1/2 cup shortening (use Spectrum Organic Shortening if allergic to soy)
*2 TBSP vanilla extract
*1/4 tsp. salt
*1 1/4 cups rolled oats (make sure they are certified gluten-free if gluten is an issue for you)
*2 TBSP tapioca flour

DIRECTIONS:
1.  Preheat oven to 350 degrees.
2.  With a mixer, cream together the brown sugar, shortening, vanilla, and salt for about 1 minute.  Add the oats and flour and mix until well combined.
3.  Line a baking sheet with aluminum foil or nonstick parchment paper.  Drop the dough by level teaspoon onto baking sheet.  Space them out well because they will spread.
4.  Bake for 8 to 12 minutes or until cookies are golden brown around the edges.  Using a hot pad, gently slide the foil or parchment paper off the baking sheet and onto a flat service (I used a cutting board).  Let cookies cool completely before carefully removing (I put them in the freezer for about 10 minutes).
